Dublin’s hugely popular new whiskey bar fires up Wellington Quay with the launch of the Bison BBQ.
Bison Bar, the quirky wild frontier saloon at 11 Wellington Quay, Dublin 2, just beside The Workman’s Club, has fired up Ireland’s first authentic Texan BBQ. Seven days a week, from midday to 9pm (or until the food runs out), carnivores can delight in the Bison Bar & BBQ’s thirteen hour slow roast Beef Brisket, St. Louis Rib Slabs, Half Split Chickens, Sausage Links and Pulled Pork goodness.
Head Pit Boss Oliver Byrne made the trip to Texas a number of months ago to get up close and personal with some of the Lone Star State’s legendary BBQ kings. He returned two weeks later, a stone heavier, with one Southern Pride smoker on order. When the Texan beast finally arrived in Dublin port, the front wall of the bar had to be partially removed to get the hefty lady into place in the kitchen!
BBQ diners are invited to choose from the menu, order at the bar, hand over the cash, take a table number and pull up a pew. On the table, squeezy bottles of super tasty homemade Mustard and BBQ sauce, plastic knives, forks and spoons and the all important kitchen roll. The succulent meaty delights are served up on simple metal trays and are complimented by a choice of delicious homemade sides. And if that wasn’t enough to test even the mightiest of appetites, you can sweeten it all up with fresh baked Peach Cobblers or Chocolate Brownies that will have you grinning like a fool for the rest of your day.
There’s no frills, no gimmicks, no standing on ceremony and no veggie options. Bison BBQ serves top quality, 100% fresh Irish meat, slow roasted with tender care, infused with the smoke of Irish oak, basted with mouthwatering fatty juices and served with speed and courtesy.
